2 pounds chicken breast, pounded thin with a mallet or saucepan, or chicken tenderloins
1 cup unsweetened tomato sauce
2 cups mozzarella cheese, grated
1. Preheat oven to 350 degrees.
2. In a heavy bottom skillet (such as cast iron), salt chicken lightly and saute chicken over medium-high heat until browned on both sides and mostly cooked through.
3. Line a cookie sheet or glass baking dish with tinfoil (this makes for easier clean-up). Cover chicken with tomato sauce and grated mozzarella cheese.
4. Bake at 350 degrees for approximately 20 minutes, until cheese is melted and chicken is cooked completely through.
Tip: Serve with mashed cauliflower in place of pasta.
